Grilled Cheese

4slices Bread, 30g Unsalted butter, 1pinch Salt, 2slices American cheese, 100g Other cheeses (e.g., medium cheddar)
Instructions
1. Melt butter in a pan over medium-low heat (around 320°F). Sprinkle a little extra salt in the pan.
2. Place bread slices in the pan to toast the inside, where the cheese will go, for double toastiness.
3. For Deb's recipe, spread room temperature butter directly onto the bread. For Kenji's, melt butter in the pan.
4. Lightly toast one side of the bread until golden brown. This warms the bread for better cheese melting.
5. Assemble the sandwich: place one slice of American cheese in the center, then fill with other cheeses.
6. Salt the pan again, then place the assembled sandwich in the pan over very medium-low heat (around 320°F). Move it slightly to absorb butter.
7. For Deb's fro grilled cheese, put about a tablespoon of shredded cheese directly onto the hot pan, then lay the sandwich on top of it.
8. Spread the second side of the sandwich with butter. Cook for about 3 minutes per side, aiming for a nice, slow cook.
9. Flip the sandwich. Add a little more butter and a sprinkle of salt to the pan. Place a chef's press (or light weight) on top for good contact.
10. For Deb's sandwich, use a flexible metal spatula to ensure all the cheese crust is removed from the pan. Add remaining cheese to the pan for the second side.
11. Once cooked, remove the grilled cheese from the pan. It should be golden brown with melted cheese in the middle.
