Turkey Thigh Confit with Citrus Mustard Sauce

3large onions, 12sprigs fresh thyme, 2.5tablespoons table salt, 4.5teaspoons sugar, to taste pepper, 4pounds turkey thighs, 1head garlic, to taste bay leaves
Instructions
1. Coarsely chop the onions and add them to a food processor with thyme, table salt, sugar, and pepper. Pulse until it forms an oniony mush.
2. Spread about a third of the cure mixture in a baking dish, place turkey thighs, and ensure good contact with the cure. Refrigerate to cure for 4 to 6 days.
3. Rinse the cured turkey thighs to remove onion bits. Nestle them skin-side down in a baking dish with halved garlic and bay leaves, then cook in a 200 degree oven.
4. Check for tenderness with a slim skewer or paring knife. Let cool, and store or reheat in a hot oven to crisp the skin when ready to serve.
