Fried Tofu & Sweet Chili Peanut Sauce

2ea Spur chilies, 1clove garlic, 3Tbsp water, 3Tbsp white vinegar, 3Tbsp tamarind, 3Tbsp granulated sugar, 3Tbsp palm sugar, 0.25tsp salt, 1to taste chili flakes, 3Tbsp ground roasted peanuts, 1to taste cilantro, 1block firm tofu, 500ml oil for frying
Instructions
1. Start by making the sweet chili peanut dipping sauce. Slice the spur chilies and add them to a blender.
2. Add one clove of garlic, 3 tablespoons of water, 3 tablespoons of white vinegar, and 3 tablespoons of tamarind to the blender. Blend until smooth.
3. Pour the blended mixture into a pot. Add 3 tablespoons of granulated sugar, 3 tablespoons of chopped palm sugar, and 1/4 teaspoon of salt. Bring to a simmer and let it simmer for a few minutes until it thickens to a dippable consistency.
4. Once the sauce has cooled and thickened, taste it and adjust as needed. Add a little more vinegar if desired.
5. Finish the sauce by adding chili flakes to taste, 3-4 tablespoons of ground roasted peanuts, and chopped cilantro. Stir well.
6. Prepare the tofu. Cut the firm tofu into triangles. Sprinkle a little salt on the tofu and let it sit for a few minutes.
7. Heat oil in a pan to about 375°F (190°C). Carefully place the tofu triangles into the hot oil. Fry for 3-4 minutes until light golden brown.
8. Remove the fried tofu from the oil and place them on a plate lined with paper towels to drain excess oil.
9. Arrange the fried tofu on a serving plate. Pour the sweet chili peanut sauce into a small bowl and place it next to the tofu. Garnish the sauce with extra ground peanuts and cilantro.
10. Serve and enjoy your crispy fried tofu with sweet chili peanut sauce!
