Mayan Cafe Lima Beans

340g Lima beans (large, green, flash frozen), 30g Pumpkin seeds (pepitas), 0.5bunch Fresh parsley, 1bunch Green onions, 1whole Lime, 15ml Avocado oil, 5ml Sesame oil, 5g Salt, 10ml Olive oil
Instructions
1. Thaw the frozen lima beans. Boil them for about 5 minutes to prevent grittiness, then drain thoroughly.
2. While beans boil, heat a dry pan and toast pumpkin seeds (pepitas) over medium heat until they start popping and are as dark as desired. Keep them moving to prevent burning. Set aside.
3. Dry the drained lima beans by spreading them in a single layer on a towel and letting evaporation do the rest. Ensure they are very dry to prevent exploding in hot oil and to promote browning.
4. Grind the toasted pumpkin seeds to a breadcrumb-like texture using a food processor or mortar and pestle.
5. Wipe out the pan. If using a carbon steel pan, add a drop of oil, spread it thin, and let it burn off on high heat to create a fresh seasoning layer. Cool the pan slightly after seasoning.
6. Prep the vegetables: finely chop about half a bunch of fresh parsley. Remove roots from green onions and slice them thin until the dry part.
7. Add avocado oil and sesame oil to the pan. Heat until the oil is smoking right before adding the beans.
8. Add the dried lima beans to the hot oil. Toss them to get them in a thin, even layer. Let them sit for about a minute to get really brown, even slightly charred, on the bottom side before stirring. Continue cooking for a couple of minutes total until desired color is achieved.
9. Add the chopped parsley and green onions to the pan. Stir briefly, just enough to slightly soften them, preserving their fresh flavors.
10. Stir in the ground pumpkin seeds.
11. Squeeze in the juice of at least one whole lime. Add salt to taste (a couple of big pinches).
12. Finish the dish with a drizzle of good olive oil, stirring to combine and create a salad dressing-like texture.
