Cantonese beef chow fun in an air fryer

Ingredients
1pack dried pho noodles, 1.5L water, 1.5Tbsp soy sauce, 1Tbsp oyster sauce, 0.5Tbsp dark soy sauce, 1Tbsp cooking oil, 200g beef, 0.25tsp ground white pepper, 0.25tsp salt, 0.25tsp baking soda, 1tsp cornstarch, 1Tbsp cooking wine, 0.5tsp dark soy sauce, 1clove garlic, 0.5Tbsp cooking oil, 1.5oz garlic chives, 1.5oz onion, 1.5oz red chili pepper, 4oz bean sprout, 0.5Tbsp cooking oil
Instructions
1. Bring 1 and 1/2 L of water to a boil using an electric kettle.
2. Soak the dried pho noodles for 5 to 8 minutes depending on their thickness until tender with a slight chew. Drain completely.
3. Season the noodles with 1 and 1/2 Tbsp of soy sauce, 1 Tbsp of oyster sauce, and 1/2 Tbsp of dark soy sauce. Mix thoroughly.
4. Drizzle in 1 Tbsp of cooking oil to coat the noodles.
5. Slice the beef into 1/8 of an inch thick pieces.
6. Marinate the beef with 1/4 tsp of ground white pepper, 1/4 tsp of salt, 1/4 tsp of baking soda, 1 tsp of cornstarch, 1 Tbsp of soy sauce, and 1 Tbsp of cooking wine. Mix well.
7. Drizzle in 1/2 tsp of dark soy sauce for color and continue to mix.
8. Add garlic and 1/2 Tbsp oil to the beef and mix to coat, preventing it from drying out.
9. Prepare the vegetables: cut 1 and 1/2 oz of garlic chives into 2-inch long pieces, thinly slice 1 and 1/2 oz of onion, julienne 1 and 1/2 oz of red chili pepper, and have 4 oz of bean sprouts ready.
10. Add 1/2 Tbsp of oil to the vegetables and mix to coat, preventing them from drying out.
11. Divide all ingredients into two identical batches for cooking in smaller portions.
12. Add one batch of the noodles to the air fryer basket, then spread the marinated beef evenly on top in a single layer.
13. Set the air fryer to its highest temperature and cook for 3 minutes, or until the beef is just cooked.
14. Give the noodles and beef a stir, bringing the noodles to the top. Return to the air fryer and cook for 3 to 5 more minutes.
15. Give the noodles another stir and return to the air fryer for 3 to 5 more minutes to fully cook the noodles.
16. Pull out the basket and add the vegetables evenly on top. Air fry for 2 to 4 more minutes.
17. Give everything a good mix. This batch is done. Repeat for the second batch of ingredients.
