Apartment Ribs

2tbsp dark brown sugar, 1tsp maldon salt, 1tsp black pepper, 1tsp smoked paprika, 1tsp garlic powder, 1tsp onion powder, 1tsp mustard powder, 0.5tsp cinnamon, 0.5tsp celery seed, 0.5tsp cayenne pepper, 1slab baby back pork ribs, 2cups apple cider vinegar, 1tsp chili flakes, 2tbsp banana ketchup, 1cup water, 2tbsp chopped roasted peanuts, 1tbsp crispy garlic, 0.25cup cilantro
Instructions
1. Make the dry rub by whisking together dark brown sugar, maldon salt, black pepper, smoked paprika, garlic powder, onion powder, mustard powder, cinnamon, celery seed, and cayenne pepper in a bowl.
2. Season the baby back pork ribs with the dry rub, making sure to cover all sides and massaging the rub into the meat.
3. Wrap the seasoned ribs in aluminum foil to insulate and marinate, then let rest in the refrigerator for 30 minutes.
4. Make the BBQ sauce by whisking together apple cider vinegar, dark brown sugar, kosher salt, black pepper, red pepper flakes, and banana ketchup in a bowl.
5. Double wrap the ribs in aluminum foil creating a pouch (the ghetto sous-vide method), add water inside the foil pouch, seal tightly, and place on a baking sheet.
6. Bake in the oven at 350 degrees Fahrenheit for 60 minutes.
7. Remove the ribs from the foil, place on a wire rack over a baking sheet, and mop with the prepared BBQ sauce.
8. Raise the oven temperature to 450 degrees Fahrenheit and bake for 10 minutes to caramelize the outside of the ribs.
9. Repeat the process of mopping the ribs with BBQ sauce and baking at 450 degrees Fahrenheit for 10 minutes, doing this a total of a few times until well caramelized.
10. Slice the ribs between the bones, plate them, and garnish with chopped roasted peanuts, crispy garlic, and torn cilantro leaves.
