Awesome Blossom Onion Bites

Ingredients
100g Sour cream, 50g Mayonnaise, 15g Horseradish, 20g Ketchup, 2g Cayenne pepper, 1개 Yellow onion, 1.5tsp Kosher salt, 1g Black pepper, 3g Garlic powder, 50g Cornmeal, 100g All-purpose flour, 5g Baking powder, 100ml Milk, 500ml Cooking oil
Instructions
1. To make the awesome blossom sauce, combine sour cream, mayonnaise, a big spoon of horseradish, and a little ketchup in a bowl. Mix thoroughly.
2. Taste the sauce and adjust seasoning. Add a few shakes of cayenne pepper for extra awesomeness, then mix and taste again. Refrigerate until needed.
3. Dice one onion. Cut about an inch off the top, then cut in half through the root end. Peel off the skin and any tough layers underneath.
4. Slice the peeled onion halves straight down, making cuts close together for a finer dice. Then make cuts of the same thickness across, stopping near the root end.
5. Transfer two cups of diced onions into a mixing bowl. Sprinkle with 1.5 teaspoons of kosher salt and mix well. Let it sit for about 15 minutes to draw out moisture.
6. Transfer the salted onions to a strainer and rinse very thoroughly under cold running water to remove excess salt. Let drain for a couple of minutes.
7. Transfer the drained onions to a dry bowl. Add a pinch of salt, freshly ground black pepper, a few shakes of cayenne, and garlic powder. Mix well.
8. Add cornmeal, all-purpose flour, and baking powder to the onion mixture. Stir these dry ingredients together before adding the milk.
9. Pour in the milk and continue stirring until a very thick batter is formed. Adjust consistency with more flour or milk if needed.
10. Let the batter sit for 5 to 10 minutes while heating oil in a skillet over medium-high heat to about 350°F (175°C).
11. Once the oil is hot, transfer rounded tablespoon portions of the batter into the skillet. Fry about 6 bites at a time for 3 minutes per side until beautifully browned and crispy.
12. Carefully remove the fried bites from the oil onto a paper towel-lined plate to drain. Fry the remaining batter.
13. Serve the awesome blossom onion bites with the prepared awesome blossom sauce. Garnish the sauce with an extra shake of cayenne pepper for added flavor.
