Amazing Seafood Pasta by Vincenzo's Plate

0.5kg Mussels, 0.5kg Clams (Vongole), 200g Calamari rings, 200g Australian tiger prawns, 375g Fresh fettuccine, 300g Cherry tomatoes, 1handful Chopped parsley, 1teaspoon Dry chili, 3cloves Garlic cloves, 1pinch Salt, 1pinch Pepper, 4tablespoons Extra virgin olive oil, 500ml Homemade passata, 2tablespoons Water
Instructions
1. Clean mussels and vongole by placing them in water with some salt to remove any dirt or sand. Ensure all shells are clean.
2. Pour about four tablespoons of extra virgin olive oil into a large saucepan over medium heat.
3. Crush three garlic cloves and add them to the saucepan. Cook for about 1 minute, ensuring not to burn the garlic.
4. Cut the cherry tomatoes in half. Add 2 tablespoons of water to the garlic to prevent it from burning.
5. After about 30 seconds, add the cherry tomatoes to the saucepan. Cook for about 2 minutes, pressing on the tomatoes to release their juice.
6. At the same time, add the calamari rings to the saucepan. Cook on a gentle medium-low heat until almost done, which takes about 5-6 minutes.
7. Once the calamari are almost cooked, add the prawns, mussels, and vongole to the saucepan. Stir and cook for about 2 minutes.
8. Cover the saucepan with a lid and let it cook for 1 minute to allow the mussels and vongole to open from the steam.
9. Add the dry chili (optional) and chopped parsley. Season with a little salt and a nice amount of pepper. Stir to combine all flavors.
10. Cover again and cook for an extra minute or until all mussels and vongole are open.
11. Remove most of the vongole and mussel shells, leaving some for decoration if desired. This makes the pasta easier to eat.
12. Add the homemade tomato passata to the seafood. Stir to ensure all seafood is coated with the sauce. Cook for about 10 minutes.
13. While the sauce is cooking, boil the fresh fettuccine pasta according to package instructions, which typically takes 4 to 5 minutes.
