Air-Fryer Jalapeño Poppers

Instructions
1. Cut six jalapenos in half lengthwise, keeping the stem intact. Use a spoon to dig out the seeds and ribs.
2. Season the prepped jalapeno halves with a quarter teaspoon of table salt.
3. Thinly slice one scallion and mince one tablespoon of cilantro. Chop one tablespoon of jarred pickled jalapenos.
4. In a bowl, combine the scallion, minced cilantro, chopped pickled jalapenos, four ounces of shredded sharp cheddar cheese, four ounces of softened cream cheese, one teaspoon of lime zest, and two teaspoons of corn starch. Mix well until combined.
5. Fill each jalapeno half with about a tablespoon of the cheese mixture, ensuring it's flush with the edges of the pepper.
6. Take six strips of thin-cut bacon, cut crosswise to make 12 pieces. Wrap one piece of bacon around each stuffed jalapeno popper, ensuring the seam is at the bottom.
7. Place all 12 bacon-wrapped jalapeno poppers in an air fryer basket. It's okay if they touch, but do not stack them.
8. Air fry the poppers at 400 degrees Fahrenheit (200 degrees Celsius) for 10 minutes, or until the bacon is crisp and the peppers are tender.
9. Carefully remove the hot jalapeno poppers from the air fryer and serve immediately.
