Banana Pancakes

120g all-purpose flour, 2tbsp granulated sugar, 2.5tsp baking powder, 0.5tsp salt, 2개 large ripe bananas, 3tbsp unsalted butter, 1cup milk, 1개 large egg, 1tsp vanilla extract, 1tbsp oil or butter, 0적당량 maple syrup, 0적당량 banana slices
Instructions
1. Add 1 cup (120g) of all-purpose flour, 2 tablespoons of granulated sugar, 2 and a half teaspoons of baking powder, and 1/2 teaspoon of salt into a bowl. Whisk to combine and set aside.
2. In another bowl, mash two large ripe bananas. Leave some chunks for texture.
3. To the mashed bananas, add 3 tablespoons of melted unsalted butter, 1 cup of milk, 1 room temperature large egg, and 1 teaspoon of vanilla extract. Whisk until nicely mixed.
4. Pour the wet mixture into the dry mixture. Stir until just combined, leaving one or two streaks. Do not overmix to ensure fluffy pancakes.
5. Heat a large pan or griddle over medium heat. Add about 1 tablespoon of oil or butter and spread it over the surface.
6. Pour about a quarter cup of batter per pancake onto the griddle. Cook for 2 to 3 minutes, or until bubbles appear on the surface and the bottom is golden brown.
7. Flip the pancakes and cook for an additional minute, or until golden brown on the bottom.
8. Transfer cooked pancakes to a plate. Continue the process, adding more butter to the griddle as needed, until all batter is used.
9. Drizzle with maple syrup and top with slices of banana before serving.
