Chinese Broccoli Stir-fry

Ingredients
300g Gai Lan (Chinese broccoli), 1inch ginger, 1.5tsp water, 1tbsp fish sauce, 0.5tbsp soy sauce, 0.5tsp sugar, 1tbsp oil, 2cloves garlic, 1tsp cornstarch, 1tbsp water
Instructions
1. Separate the leaves and stems of the Gai Lan. Use the roll cutting technique to slice the stems into thin pieces. Chop the leaves smaller as well. Set them aside.
2. Grate 1 inch of ginger using a ceramic grater. Add 1.5 tsp of water to the grater. Squeeze the ginger paste and let the juice drip into a small bowl. Discard the solid bit, as we only need the juice.
3. To the ginger juice, add 1 tbsp of fish sauce, ½ tbsp of soy sauce, and ½ tsp of sugar. Mix well.
4. Turn the heat to medium and preheat the wok for 40 seconds. Add oil and the Gai Lan stems. Stir for 2 minutes because they take a bit longer to cook.
5. Toss in the leafy part and mix until the leaves are wilted. Add the diced garlic and stir until fragrant.
6. Pour in the seasoning mixture and keep stirring until well combined.
7. Quickly combine 1 tsp of cornstarch with 1 tbsp of water and mix until no lumps. Pour it into the wok and toss well.
