Banana Oatmeal Chocolate Chip Cookies

Ingredients
180g all-purpose flour, 1teaspoon baking soda, 1.5teaspoons ground cinnamon, 0.25teaspoon nutmeg, 0.5teaspoon salt, 250g mashed bananas, 113g room temperature butter, 100g granulated sugar, 165g light brown sugar, 1whole large egg, 2teaspoons vanilla extract, 350g rolled oats, 180g semi-sweet chocolate chips, 1pinch flake sea salt
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, combine 1 1/2 cups (180g) of all-purpose flour, 1 teaspoon of baking soda, 1 1/2 teaspoons of ground cinnamon, 1/4 teaspoon of freshly ground nutmeg, and 1/2 teaspoon of salt. Whisk to combine and set aside.
3. Mash about two medium bananas (1 cup or 250g) until smooth. Ensure bananas are ripe.
4. In the bowl of a stand mixer with a paddle attachment, cream 1/2 cup (113g) of room temperature butter on medium speed until creamy, less than a minute.
5. Add 1/2 cup (100g) of granulated sugar and 3/4 cup (165g) of light brown sugar to the butter. Mix on medium speed for 1-2 minutes until well combined and creamy.
6. Add one large egg and 2 teaspoons of vanilla extract to the mixture. Beat on medium speed for about 2 minutes until light and fluffy.
7. Add the mashed bananas to the wet ingredients. Mix on medium speed until well combined, which will be very fast. Scrape down the bowl.
8. Add the dry flour mixture to the wet ingredients. Mix on low speed until almost combined, leaving some streaks of flour.
9. Add 3 1/2 cups (350g) of rolled oats and 1 cup (180g) of semi-sweet chocolate chips. Mix on low speed for 10 seconds or less, then finish mixing by hand to ensure even distribution.
10. Line two rimmed baking sheets with parchment paper. Scoop 2 tablespoon-sized portions of dough onto the baking sheets, leaving about 2 inches of space between each cookie.
11. Optionally, top each cookie with a few extra chocolate chips and a sprinkle of flake sea salt.
12. Bake in the preheated oven at 350°F (175°C). If using a single oven, bake for 6 minutes, then swap the baking sheets and bake for an additional 6-8 minutes, or until the edges and center look dry.
