Puff Pastry Pizza Poppers

1package frozen puff pastry dough, 50g Parmesan cheese, 100g pizza sauce, 100g mozzarella cheese, 50g pepperoni
Instructions
1. Lay out frozen puff pastry dough on parchment paper.
2. Using a 2 1/4 to 2 1/2 inch round cookie cutter, punch out circles from the partially frozen pastry.
3. Transfer the cut circles onto a parchment-lined sheet pan.
4. Using a smaller cookie cutter (to create a 3/8 inch outer ring), punch out the center of each circle but do not remove the pastry; simply push it back into place.
5. Bake in a 400°F oven for 20 minutes or until puffed and golden brown.
6. Let the baked pastry cool for 5 minutes, then flip them over.
7. Grate a generous amount of Parmesan cheese over the flipped pastry.
8. Flip the pastry back over and space them evenly. Carefully press down the center of each pastry with a teaspoon to create a space for fillings, being careful not to compress the outer ring.
9. Bake in the 400°F oven for 7 minutes.
10. Let cool for 10 to 15 minutes to dry out a bit.
11. Fill the centers with a generous tablespoon of pizza sauce.
12. Top with mozzarella cheese (or Monterey Jack) generously.
13. Place a slice of pepperoni on top of each, pressing lightly to secure.
14. Bake in the 400°F oven for about 20 minutes or until pepperoni and cheese are bubbling and browned.
15. Transfer to a rack to cool until just barely warm for maximum crispiness before serving.
