Pork Paprikash

Ingredients
2pieces pork loin chops, 1tbsp flour, 2tbsp oil, 200g mushrooms, 200ml chicken stock, 100g sour cream, 1tbsp sweet paprika, 1tsp caraway seeds, 1sprig parsley, 1pinch salt, 1pinch pepper
Instructions
1. Take two pork loin chops. You could do this just as easily with chicken breast. Make them half as thick as they are right now.
2. Pound the pork chops into little paillards.
3. Season the pork chops with salt and pepper, then flour them to make them crusty.
4. Put the pork chops into a really hot pan with oil. Just looking for crust here, we're not trying to cook them all the way through. They'll cook again in the sauce.
5. Remove the pork chops from the pan and set aside.
6. Add sliced mushrooms to the pan and sauté until browned.
7. Deglaze the pan with chicken stock and reduce by half until it's almost starting to get syrupy.
8. Kill the heat and add sour cream (or crème fraîche), sweet paprika, and caraway seeds to the pan. Stir to combine.
9. Return the pork chops and any accumulated juices to the pan. Garnish with parsley.
10. Serve the pork paprikash.
