Cowboy Bacon

1pound thick cut bacon, 0.25cup brown sugar, 2tbsp barbecue sauce, 1tbsp rice vinegar, 0.5tsp black pepper, 0.5tsp garlic powder, 1개 jalapeno chili, 1개 Fresno chili
Instructions
1. Completely cover a baking pan with heavy-duty foil and place a baking rack over it. If you don't have a rack, use crinkled up foil.
2. Lay out thick-cut bacon strips on the rack. It's fine if pieces are touching or slightly overlapping as bacon shrinks when it cooks.
3. Transfer the pan to the upper center of a 375 degree Fahrenheit oven for 10 minutes.
4. Pull out the bacon, flip it over, and pop it back in for another 10 minutes. This cooks it halfway before glazing.
5. While waiting, mix the glaze: combine a packed 1/4 cup of brown sugar, a little barbecue sauce, rice vinegar, freshly ground black pepper, and garlic powder. Whisk well.
6. If bacon is curling, snip with scissors to relieve tension. Brush one side of the bacon generously with the glaze, covering the entire surface.
7. Pop the bacon back in the oven for 7 minutes.
8. Pull out the bacon, carefully flip it over, and repeat the glazing process on the second side. Do not lay the glaze down too thick.
9. Pop the bacon back in for another 7 minutes.
10. Pull out the bacon and flip it again. This time, do not brush with glaze. Pop it back in the oven for about 10 minutes to allow the glaze to caramelize.
11. After 10 more minutes, give the bacon another flip. If desired, rearrange pieces for a more uniform cook (swap outer pieces with inner ones).
12. Give the bacon another brushing of glaze and pop it back in the oven for another 10 minutes or so.
13. Once the bacon is close to being done, give it one more brush of glaze. Using the glaze as glue, place seeded sliced chili rings (jalapeno and Fresno) on each strip.
14. Pop the bacon back in the oven for about 10 minutes.
15. Pull out the bacon and apply the final glaze (you should be almost out of glaze). Put them back in the oven until the chili peppers are tender and the bacon is fully rendered and beautifully browned, about 7 minutes.
16. Once perfect, remove from oven and transfer to a piece of parchment paper to cool completely to room temperature. This prevents sticking.
17. Cut the bacon strips in half before serving for more manageable bites. It's best to do this while they are on the parchment paper.
