Vanilla Panna Cotta

0.25cup cold water, 0.25oz packet unflavored gelatin, 0.5cup granulated sugar, 1cup whole milk, 1beautiful vanilla bean, 1.5cup heavy cream, 1cup fresh berries
Instructions
1. Grab a 1/4 cup of cold water and transfer it to a small bowl. Add a 1/4 oz packet of unflavored gelatin, sprinkling it evenly over the top. Set aside to hydrate.
2. In a medium pot, add 1/2 a cup (100g) of granulated sugar and 1 cup of whole milk. Split one vanilla bean down the middle, open it up, scrape out the seeds, and add both the seeds and the pod into the milk mixture.
3. Place the pot over medium-low heat and stir the mixture until it heats up to about 140°F (hot to the touch).
4. Remove the pot from heat. Add the bloomed gelatin to the hot mixture and whisk until fully dissolved.
5. Whisk in 1.5 cups of heavy cream.
6. Strain the mixture to remove the vanilla bean pod and any fibrous parts.
7. Divide the mixture evenly amongst your chosen containers (e.g., mini coupes, ramekins, cordial glasses).
8. Carefully transfer the containers to the refrigerator and chill for 6 hours to overnight until set.
9. Serve the set panna cotta plain or with fresh berries.
