Instructions
1. Trim silver skin and large fat gobs from two pounds of sirloin steak tips. Use a knife to slip under the silver skin, wiggle it through, hold flat, and cut to remove. Don't worry about getting all bits at once; work in small patches. Check both sides of the meat.
2. Cut the trimmed sirloin steak tips into half-inch pieces. Start by creating half-inch thick strips, then cut across to make small, uniform half-inch cubes. A sharp knife helps with this process.
3. Spread the cubed beef onto a rimmed baking sheet in a single layer. Place it in the freezer for about 35 minutes until the edges are hard but the meat is still pliable.
4. While the beef is firming up, prepare the sauce. In a bowl, combine three-quarters of a cup of mayonnaise, one minced garlic clove, two tablespoons of soy sauce, one tablespoon of Worcestershire sauce, one tablespoon of dark brown sugar, one tablespoon of minced chives, and three-quarters of a teaspoon of ground black pepper. Whisk slowly until everything is well combined.
5. Grind the firm beef in a food processor, about a quarter at a time. Break up any large clumps before processing. Pulse about 35 times until the meat is in 1/16-inch distinct pieces. Periodically open and stir to ensure no meat is caught on the blade.
6. After grinding all the meat, spread it out and inspect for any remaining bits of gristle or tough fat, removing them as you find them.
7. Drizzle four tablespoons of melted and cooled unsalted butter evenly over the ground beef. Season with one teaspoon of pepper.
