Izakaya-Inspired Beef and Tofu Stew

Ingredients
1ea onion, 300g thinly sliced beef, to taste water, 1tsp dashi powder, 1ea kombu, 3tbsp mirin, 3tbsp sake, 4tbsp soy sauce, 1tbsp sugar, 1ea firm silken tofu, 3대 scallions
Instructions
1. Peel and cut onions in half, then char them slightly on the grill to add smoky flavor.
2. In a grilling pan, combine water, dashi powder, kombu, mirin, sake, soy sauce, and sugar to build the soup base.
3. Slice the charred onions thinly and add them to the soup base. Let it come to a simmer.
4. Briefly grill the thinly sliced beef for char flavor, then add it directly into the simmering stew pan.
5. Cover and simmer the beef and onions for about 30 to 40 minutes until deeply tender and flavorful.
6. Cut firm silken tofu into large chunks and spoon them into the simmering stew. Let it cook for another 15 to 20 minutes.
7. Garnish with freshly chopped scallions and serve warm, ideally over rice.
