Garlic Shrimp with Vermicelli Noodles

150g Mung bean vermicelli, 3tbsp Soy sauce, 1tbsp Oyster sauce, 1tbsp Fish sauce, 3tbsp Minced garlic, 0.25cup Diced cilantro, 3tbsp Diced red chilies, 0.25cup Water, 4tsp Butter, 1medium Diced sweet onion, 200g Enoki mushrooms, 500g Shrimp
Instructions
1. Soak the mung bean vermicelli in clean water for about 10 minutes to soften. Adjust soaking time for other noodle types based on thickness.
2. In a small bowl, combine 3 tbsp of soy sauce, 1 tbsp of oyster sauce, 1 tbsp of fish sauce, 3 tbsp of minced garlic, ¼ cup of diced cilantro (or scallions), 3 tbsp of diced red chilies (or red bell peppers), and ¼ cup of water. Mix well.
3. Preheat a clay pot (or stock pot) until hot. Add 4 tsp of butter.
4. Add diced sweet onion and stir-fry over medium-low heat until the onion bits become soft and the edges turn slightly brown, about 5 minutes.
5. Add the enoki mushrooms (or thinly sliced other mushrooms) and spread them evenly on the bottom of the pot. This acts as a protective layer to prevent noodles from sticking.
6. Take the softened noodles out of the water and add them to the clay pot, spreading them out as well.
7. Add the shrimp on top of the noodles.
8. Pour the prepared sauce over the ingredients.
9. Put on the lid and cook over low heat for 6 to 10 minutes or until the shrimp are cooked through.
