1000ml Water, 10g Kombu, 20g Bonito flakes
Instructions
1. Wipe the kombu with a damp cloth to remove any impurities. Do not wash it, as this will remove the umami-rich white powder.
2. Place the kombu in a pot with water and let it soak for at least 30 minutes, or preferably overnight in the refrigerator.
3. Heat the pot over medium heat. Just before the water comes to a boil (when small bubbles start to form around the edges), remove the kombu.
4. Bring the water to a rolling boil, then add the bonito flakes. Turn off the heat immediately.
5. Let the bonito flakes steep in the hot water for about 30 seconds to 1 minute, until they sink to the bottom.
6. Strain the dashi through a fine-mesh sieve lined with a paper towel or cheesecloth to remove the bonito flakes.
