Chinese marry me chicken

4stalks scallions, 2ea shallots, 4tbsp oil, 2.5tbsp soy sauce, 1tbsp oyster sauce, 1tsp sugar, 4ea chicken legs, 1piece ginger, 2cloves garlic, 100g mushroom slices, 0.5ea carrot, 100g daikon radish, 2cup water, 1pinch salt
Instructions
1. Start by frying scallions and shallots over low heat until golden and incredibly fragrant. Reserve the crispy aromatics for later.
2. Add soy sauce, oyster sauce, and a little sugar to the pan. Stir over low heat until slightly thickened to make your scallion sauce.
3. Add chicken legs (or breast meat), ginger, garlic, scallions, mushroom slices, carrot, daikon radish, and water to the pot.
4. Simmer for 8 to 10 minutes, then let it sit in the hot broth. The residual heat will continue to cook the chicken to the perfect doneness.
5. Debone the chicken and cut into bite-sized pieces.
6. Drizzle the scallion sauce all over the chicken. Your marry me chicken is done.
7. Season the broth with soy sauce and salt, and turn it into a noodle soup.
