Avocado Pastry Quiche

Ingredients
2ea ripe avocados, 400g self-raising flour, 1pinch salt, 4tablespoon water, 300g frozen peas, 0.5bunch basil leaves, 1pinch pepper, 90g cheddar cheese, 6ea large free-range eggs, 100g salad leaves, 1ea apple, 3tablespoon olive oil, 1ea lemon
Instructions
1. Cut avocados in half, remove stone, and squeeze the flesh out of the skin.
2. Combine self-raising flour, a pinch of salt, and the avocado. Rub together until it comes together like pastry.
3. Add water and knead to form a dough. Wrap in a clean cloth and let rest for 30 minutes.
4. Roll out the pastry to about half a centimeter thick, slightly larger than your baking tray.
5. Transfer pastry to the tray, dock with holes to let steam out, and bake in the oven at 200 degrees C for 10 minutes.
6. In a liquidizer, combine frozen peas, basil, salt, pepper, cheddar cheese, and eggs. Whiz until smooth.
7. Pour the filling into the pre-baked pastry tray and bake in the oven for 10 to 15 minutes until the egg is set.
8. Make the salad by slicing apple into matchsticks, mixing olive oil and lemon juice for the dressing, and tossing with salad leaves.
9. Top the cooked quiche with the salad and shaved cheddar cheese.
