2tbsp Mayonnaise, 1tbsp Ketchup, 1tsp Yellow Mustard, 1tbsp Sweet Pickle Relish, 0.5tsp Garlic Powder, 0.5tsp Smoked Paprika, 0.5tsp Cider Vinegar, 3shakes Cayenne Pepper, 1handful Funyuns, 3slices Dill Pickle Slices, 0.25onion Red Onion, 0.25head Iceberg Lettuce, 280g Ground Beef, 1bun Burger Bun, 3slices White Cheddar Cheese, 1pinch Salt, 1pinch Black Pepper
Instructions
1. Combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, garlic powder, smoked paprika, cider vinegar, and cayenne pepper in a bowl. Mix well and refrigerate until needed.
2. Prepare the burger patties by taking 5 oz (140g) of ground beef and placing it between two sheets of plastic wrap. Use a pot or a flat object to smash the beef flat into a thin patty. Repeat for a second patty. You can fine-tune the edges with your fingers for a neater shape.
3. Take a burger bun, open it up, and spread a generous amount of the prepared sauce on both halves. Place the bun halves, sauce-side down, in a hot pan to toast until golden brown and slightly crispy. Set aside.
4. Heat a cast iron pan over high heat until very hot. Transfer the pre-smashed burger patties into the hot pan. Press down firmly with a spatula to ensure good contact with the pan. Season the top of the patties generously with salt and freshly ground black pepper.
5. Cook the patties for a couple of minutes, or until the meat around the bottom edge loses its raw red color. Use a spatula to loosen the front edge of the patties, then carefully scrape underneath and flip them over. Immediately place a slice of white cheddar cheese on each patty.
6. Once the cheese is melted (about a minute), the patties are cooked through. Transfer the first patty onto the bottom half of the toasted bun. Place the second patty on top of the first. Add a third slice of cheese on top of the second patty.
7. Layer three dill pickle slices on top of the cheese, followed by some thinly sliced fresh red onion. Top with a handful of Funyuns.
8. Pile shredded iceberg lettuce onto the top bun half (which already has sauce). Carefully place the top bun over the assembled burger and press down gently. Serve immediately with extra Funyuns on the side.
