Sticky Pork Ribs with Tangy Smashed Cucumbers

500g pork ribs, 3ea star anise, 1tsp cloves, 1tsp Sichuan peppercorns, 1tsp fennel seed, 1tbsp Chinese five spice, 3ea cucumbers, 1tbsp sesame seed oil, 1tbsp black vinegar, 2tbsp soy sauce, 2ea garlic, 1tsp salt, 1tsp chili flakes, 3tbsp hoisin sauce, 20g peanuts, 1ea jalapeño, 1대 green onion
Instructions
1. Toast star anise, cloves, Sichuan peppercorns, and fennel seeds in a pan, then grind them into a powder.
2. Season pork ribs with Chinese five spice and the freshly ground spice mix, then wrap and marinate.
3. Bake the ribs low and slow in the oven until tender.
4. Smash and chop the cucumbers, salt them, and drain excess moisture.
5. Whisk together sesame oil, black vinegar, soy sauce, minced garlic, salt, and chili flakes to make the dressing.
6. Toss the cucumbers in the dressing and sprinkle with sesame seeds.
7. Brush the cooked ribs with hoisin sauce.
8. Slice the sticky ribs and serve plated with peanuts, sliced jalapeño, and green onion.
