Xinjiang Style Lamb Barbecue Skewers

2lb Lamb Meat, 2cup Onion Slices, 4cloves Garlic, 1.5tbsp Cumin Seeds, 2tsp Sichuan Peppercorns, 1tsp Fennel Seeds, 1tsp White Pepper, 2.5tbsp Mild Chili Flake, 1tsp Facing Heaven Chili, 2tsp Salt
Instructions
1. Debone the lamb leg by making a long cut through the middle to expose the femur bone. Use the tip of the knife to peel as much meat as possible off the bone, then work around the joint to separate the meat from the tendons.
2. Cut the lamb into 1-inch sized pieces. Don't cut them too small, or they will dry out quickly while grilling. Keep the pieces uniform in size for even cooking. Separate any excess trimmed fat to put in between lean meat pieces on the skewers.
3. Add 2 cups of onion slices to the lamb meat. Crush the onion slices a little in advance to help infuse the aroma and tenderize the meat. Add 4 cloves of crushed garlic.
4. Cover the meat and let it sit for 40 minutes.
5. Prepare the spice powder: Add 1.5 tbsp cumin seeds, 2 tsp Sichuan peppercorns, 1 tsp fennel seeds, and 1 tsp white peppercorns to a pan. Toast on low heat for 3 to 5 minutes, being careful not to burn them.
6. Put the toasted spices in a spice blender and blend into a fine powder. Transfer to a bowl.
7. For extra spice, mix 2.5 tbsp mild chili flakes with 1 tsp Facing Heaven chili powder. Keep this separate from the spice powder for those who prefer less spice.
8. Thread the lamb pieces onto skewers, alternating with pieces of fat if desired, to make the barbecue juicier. Leave the onion slices in the bowl.
9. Set your grill to high heat, around 500°F / 260°C. Place the lamb skewers on the hot grill.
10. Add salt generously to the lamb skewers on the grill. Some salt might fall off during cooking and turning.
11. Flip the skewers after a few minutes on each side until they have a nice charred color. Continue turning until the desired doneness is reached (e.g., medium well).
12. Once the lamb is almost done, sprinkle the prepared spice mix onto the meat. If you like spicy food, also sprinkle some of the chili flakes. Flip and sprinkle on the other side as well.
13. Remove the skewers from the grill and serve immediately.
