Sweet & Sour Fried Fish

Ingredients
500g fish fillet, 5g salt, 200g pineapple, 100g onion, 100g red bell pepper, 50g flour, 50g corn starch, 5g baking powder, 100ml water, 500ml oil, 50ml rice vinegar, 50ml ketchup, 30g sugar, 2g white pepper, 1개 egg yolk, 10g potato starch
Instructions
1. Cut the fish fillet into small pieces, toss with a bit of salt, and set aside.
2. Cut pineapple, onion, and red bell pepper into small chunks.
3. Combine flour, corn starch, baking powder, salt, and water. Stir in oil until it's a perfect consistency for the batter.
4. For the sweet and sour sauce, combine rice vinegar, ketchup, sugar, and water.
5. Wash the salt off of the fish and dry it well. Marinate with cornstarch, salt, white pepper, and egg yolk.
6. Coat the marinated fish with the batter.
7. Do a first fry of the fish at 330°F (165°C) until golden brown.
8. Heat up the oil to 390°F (199°C) and do a quick second fry of the fish.
9. Heat up the sweet and sour sauce and thicken it with a potato starch slurry.
10. Add the pineapple and veggies to the sauce, then add the fried fish, tossing gently to coat everything.
11. Plate and serve immediately so it doesn't get soggy.
