Water Browning Technique

200g Bacon, 1000g Onions, 5g Salt, 30ml Oil, 500ml Water, 300g Mushrooms (Maitake or Oyster)
Instructions
1. Boil bacon in water in a skillet until crisp and brown.
2. For caramelized onions, start with a cold skillet, add a big pile of sliced onions, season with salt, add a little oil, and water.
3. Bring the water to a boil, then cover the skillet with a lid to trap steam. This steams the onions, causing them to wilt and cook in about 10 minutes without stirring.
4. After 10 minutes, remove the lid. The water will have cooked the onions and caused them to exude their juices, which are packed with sugars and amino acids for browning.
5. Turn the heat down to medium-high and stir frequently until the onions are beautifully browned and concentrated. This will take about 30 minutes.
6. For sauteed mushrooms, place mushrooms in a skillet and add a quarter cup of water.
7. Set the burner to high and bring the water to a boil. Stir the mushrooms as they cook and collapse, shedding their juices. This takes 4 to 8 minutes.
8. Once the mushrooms have collapsed and most of the water has evaporated, turn down the heat and add half a teaspoon of oil.
9. Continue to cook the mushrooms until they are nicely browned, which will take another 4 to 8 minutes.
