Crispy & crunchy Korean fried chicken (Dakgangjeong)

1587g chicken, 0.5teaspoon salt, 0.5teaspoon black pepper, 1teaspoon minced ginger, 2cup potato starch, 4cups grape seed oil, 4cloves minced garlic, 3pieces dried red chili pepper, 0.25cup soy sauce, 0.5cup rice syrup (mulyeot), 1tablespoon vinegar, 1tablespoon mustard sauce, 1tablespoon brown sugar, 0.25cup peanuts, 1tablespoon sesame seeds
Instructions
1. Cut the chicken wings in half and place them in a bowl.
2. Wash the chicken wings a couple of times in cold water.
3. Season the chicken with 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 1 teaspoon minced ginger. Mix well using both hands.
4. Coat each chicken piece lightly with potato starch. You will need a total of 2/3 cup of potato starch.
5. Heat 4 cups of grape seed oil (or any cooking oil) in a pot. Fry the chicken in batches for 12 minutes until golden brown and crispy. This is the first fry.
6. Remove the chicken from the oil and set aside. Stir the bottom of the pot with tongs to prevent starch from sticking.
7. Increase the heat and fry the chicken again for a second time until it turns like a rock, but remains juicy inside. This will make it extra crunchy.
8. Prepare the sauce: Mince 4 cloves of garlic (about 1.5 tablespoons). Cut 3 dried red chili peppers into small pieces and remove the seeds.
9. In a separate pan, heat 2 tablespoons of cooking oil. Add the minced garlic and dried red chili peppers. Stir-fry until fragrant.
10. Add 1/4 cup soy sauce, 1/2 cup rice syrup (mulyeot), 1 tablespoon vinegar, and 1 tablespoon mustard sauce to the pan. Stir well.
11. Add 1 tablespoon brown sugar to the sauce and stir until dissolved. Bring the sauce to a boil.
12. Add the fried chicken and 1/4 cup of fried peanuts to the sauce. Toss until the chicken is evenly coated.
13. Transfer the chicken to a serving basket and sprinkle with sesame seeds.
14. Serve and enjoy with a cold beer!
