Garlic Steak Fries

900g Skirt steak, 8cloves Garlic, 2tsp Kosher salt, 1tsp Black pepper, 0.5tsp Cayenne pepper, 1tbsp White vinegar, 2tbsp Vegetable oil, 900g Frozen crinkle cut fries, 0.5medium Onion, 0.5medium Bell pepper, 1tbsp Olive oil, 4tbsp Butter (unsalted), 200ml Heavy cream, 100g Cheddar cheese, 100g Pepperjack cheese
Instructions
1. Prep the skirt steak by identifying the grain and cutting it into 4-5 inch pieces across the grain. This ensures tenderness after cooking.
2. Prepare the marinade: crush 6-8 large cloves of garlic, add 1 teaspoon of kosher salt per pound of meat, freshly ground black pepper, a few shakes of cayenne, a little white vinegar, and vegetable oil. Whisk thoroughly.
3. Transfer the steak pieces into the marinade and toss until evenly coated. Cover and refrigerate for a minimum of two hours, or ideally overnight.
4. The next day, remove the steak from the fridge. Scrape off any excess garlic from the marinade and set it aside to use later for garlic butter. Return the steak to the fridge until ready to cook.
5. Preheat oven and spread a 2-lb bag of frozen crinkle-cut fries onto a foil-lined sheet pan. Bake according to package directions, adding about 10 minutes to achieve crispiness. Set aside and re-crisp for 10 minutes before serving.
6. In a skillet over high heat, add olive oil, diced onion, and bell pepper with a pinch of salt. Cook, stirring for a couple of minutes, until they start to color, sweeten, and soften. Remove from heat and transfer to a bowl.
7. Add about a tablespoon of vinegar to the cooked onions and peppers and stir quickly. This will be a garnish and flavor the pan for the steak.
8. Melt a couple of tablespoons of butter in the same skillet over medium to medium-high heat. Add the steak pieces, cooking in batches if necessary to avoid overcrowding the pan.
9. Once all steak is cooked, reduce heat to low. Add the reserved garlic from the marinade to the pan and sizzle for about 30 seconds. Add another chunk of butter and stir until melted to create a flavorful garlic butter. Add a pinch of salt if using unsalted butter.
10. For the cheese sauce, combine heavy cream, a little cayenne, and a pinch of salt in a saucepan over medium-high heat. Bring to a boil, whisking as it rises to prevent boiling over. Let it cook and reduce for 1 minute.
11. Turn off the heat and add a combination of cheddar and pepperjack cheese (or your preferred cheese). Whisk continuously until all the cheese is perfectly melted and emulsified.
12. Slice the cooked steak across the grain into pieces that match the size and shape of the French fries. Assemble by topping fries with steak, garlic butter, cheese sauce, and the onion and pepper garnish.
