Mom’s Chicken Soup

Ingredients
1whole chicken, 2l water, 1bunch thyme, 1bunch rosemary, 2leaves bay leaf, 1chunk ginger, 1pinch salt, 1개 onion, 2stalks celery, 2개 carrot, 2tbsp butter, 3cloves garlic, 0.5bunch cilantro, 1개 lime, 1개 jalapeno, 1ear corn
Instructions
1. Place the cleaned and dried chicken in a pot. Add water, ensuring the chicken is covered. Add the chicken neck, thyme, rosemary, bay leaf, a big chunk of ginger, and a big pinch of salt to the pot.
2. Let the chicken cook through to create a gorgeous stock.
3. While the chicken is cooking, chop the onion, celery, and carrots for the mirepoix. Prepare the garlic.
4. Once the chicken is finished cooking, pull it out of the pot. Let it cool, then remove the skin and shred the meat.
5. In a separate pan, melt a lot of butter. Add the chopped onions, celery, and carrots (mirepoix) and saute until translucent.
6. Add the prepared garlic to the sauteed vegetables and cook until fragrant.
7. Add the sauteed vegetables and garlic to the chicken stock. Add corn, cilantro, lime, and jalapeno to the soup.
8. Add the shredded chicken back into the soup. Simmer until all ingredients are heated through and flavors are combined.
