Deb Pearlman's Turkey Meatloaf

Instructions
1. Roughly chop one medium yellow onion, smash garlic cloves, and roughly chop one slim carrot (or two if small).
2. In a pan, add olive oil and sauté the chopped vegetables (onion, carrots, garlic) with salt and pepper until they begin to brown.
3. In a bowl, combine 1/2 cup bread crumbs, 1/4 cup chicken broth, 1/2 tablespoon tomato paste, 1 teaspoon Dijon mustard, 1 tablespoon Worcestershire sauce, 2 tablespoons flat leaf parsley, 1 teaspoon salt, 1/2 teaspoon pepper, and one egg.
4. Prepare the glaze by mixing 1 heaped tablespoon of ketchup, 1 tablespoon of molasses, 1 tablespoon of cider vinegar, 1 teaspoon of hot sauce, and 1 teaspoon of Worcestershire sauce. Add kosher salt and freshly ground black pepper to taste.
5. Once the vegetables are browned, add them to the breadcrumb mixture. Mix with a fork.
6. Add the vegetable-egg mixture to the ground turkey and combine just until dispersed. Do not overwork the meat.
7. Lightly coat a baking tray or dish with oil (or nonstick spray). Pat the meatloaf mixture into a roughly 4x8 inch shape in the prepared pan.
8. Brush or spoon all of the prepared glaze over the meatloaf.
9. Bake in a preheated oven (or toaster oven) at 350°F (175°C) for 30 to 35 minutes.
