Chinese Beef and Basil Stir-fry

Ingredients
60g Thai basil leaves, 300g beef, 0.25tsp white pepper, 0.25tsp garlic powder, 0.25tsp baking soda, 0.5tbsp soy sauce, 1tbsp cooking oil, 5cloves garlic, 1.5inch ginger, 5chilies Thai bird chilies, 2tbsp oil to stir fry, 1tbsp oyster sauce, 1tbsp fish sauce
Instructions
1. Pick 40g - 80g of Thai basil leaves from the stems.
2. Cut 300g of beef against the grain into thin slices. Recommended cuts are rib eye, sirloin, flank, and strip steak.
3. Marinate the beef with 1/4 tsp of white pepper, 1/4 tsp of garlic powder, 1/4 tsp of baking soda, and 1/2 tbsp of soy sauce. Mix thoroughly.
4. Drizzle 1 tbsp of cooking oil over the beef and mix to coat, which helps separate the slices during stir-frying.
5. Crush and dice 5 cloves of garlic and 1.5 inches of ginger. Dice 5 Thai bird chilies.
6. Heat a wok over high heat until smoking hot. Add 2 tbsp of oil and swirl to coat the bottom.
7. Add the diced ginger, garlic, Thai bird chilies, and the marinated beef to the wok. Stir-fry for about 2 minutes, or until the beef just changes color.
8. Season with 1 tbsp of oyster sauce and 1 tbsp of fish sauce. Quickly mix to combine all the flavors.
9. Add the basil leaves and stir-fry for less than 10 seconds, just until they wilt.
10. Serve immediately with rice.
