Crispy Fried Chicken Sandwich

250ml buttermilk, 5g salt, 15ml hot sauce, 20g dry ranch dressing mix, 2개 boneless skinless chicken breasts, 150g all-purpose flour, 15g corn starch, 2g freshly ground black pepper, 5g cayenne, 1개 egg, 30ml regular milk, 1l oil for frying, 30g mayo, 2개 hamburger bun, 50g sliced dill pickles
Instructions
1. Prepare the marinade by mixing buttermilk, salt, hot sauce, and dry ranch dressing mix. Mix well.
2. Take boneless, skinless chicken breasts and make 3-4 shallow slashes in the thick end in one direction and 3-4 in the other direction. This helps the marinade penetrate and ensures even cooking.
3. Toss the prepped chicken breasts in the marinade until very well coated and submerged. Transfer to the fridge to marinate for 2-4 hours.
4. While the chicken is marinating, prepare the breading mix. Combine all-purpose flour, corn starch, salt, freshly ground black pepper, cayenne (a lot if you want it spicy), and the rest of the dry ranch dressing mix powder. Mix thoroughly.
5. Prepare the wash by mixing one egg, some buttermilk, and a splash of regular milk. Mix well.
6. Once the chicken has marinated, use a fork to pull a chicken breast out of the marinade, letting excess drip off. Coat it very thoroughly on both sides with the seasoned flour breading mix.
7. Shake off the excess flour, then dip the chicken in the wash until saturated.
8. Dip the chicken back into the flour again, coating it very thoroughly on both sides. This double-dipping creates a thick, gnarly, irregular surface for extra crispiness.
9. Transfer the breaded chicken to a rack and let it dry for at least 15 minutes to allow the coating to adhere.
10. Heat oil to 350-375°F (175-190°C). Carefully place the chicken into the hot oil and fry for about 4-5 minutes, or until beautifully golden brown, crispy, and safely cooked through.
11. Remove the fried chicken and transfer it onto some crinkled foil to drain. This prevents the bottom from getting soggy.
12. Spread mayo on a lightly buttered and toasted hamburger bun. Add sliced dill pickles.
13. Place the fried chicken breast on the bun and serve.
