Double-Glazed Salmon with Ginger and Apple Cider

2quarts cold water, 0.25cup table salt, 0.25cup sugar, 2pieces salmon filets, 2tbsp oil, 1tbsp parsley
Instructions
1. Prepare the brine by dissolving a quarter cup of table salt and a quarter cup of sugar in two quarts of cold water. Ensure everything is fully dissolved.
2. Submerge the salmon filets in the brine for 15 minutes. Fish proteins are delicate, so a shorter brining time is sufficient.
3. After 15 minutes, remove the salmon from the brine and pat it dry thoroughly.
4. Heat some oil in a pan until hot. Sear the salmon until it develops a beautiful brown crust.
5. Glaze the top of the seared salmon and transfer it to a 300-degree Fahrenheit oven. Cook until the internal temperature reaches 125 degrees Fahrenheit.
6. Once the salmon is done, apply a second glaze and sprinkle with parsley before serving.
