Liang Mian (Chilled Sesame Noodles)

Ingredients
1pound fresh wheat noodles, 1tablespoon sesame oil, 3tablespoons Chinese sesame paste, 1tablespoon mayo, 1tablespoon chili oil, 2tablespoons soy sauce, 2tablespoons Chinese black vinegar, 2tablespoons water, 1tablespoon sugar, 1tablespoon minced garlic, 1tablespoon grated ginger, 1cup shredded chicken, 0.5cup cucumber, 2stalks scallion, 1tablespoon chili crisp, 1teaspoon sesame seeds
Instructions
1. Bring 4 quarts of water to a boil. Add 1 pound of fresh wheat noodles and immediately turn the heat down to a gentle simmer (around 170°F).
2. Cook the noodles at a bare simmer until they are almost done, with just a tiny bit of uncooked core remaining. They will finish cooking as they rest.
3. Drain the cooked noodles very well. Toss them with a touch of sesame oil and spread them out on a sheet pan to cool in the fridge.
4. In a bowl, whisk together Chinese sesame paste, mayonnaise, chili oil, and a little sesame oil until well combined and emulsified.
5. Add soy sauce, Chinese black vinegar, water, sugar, minced garlic, and grated ginger to the sesame paste mixture. Whisk until the sauce is smooth and well combined.
6. Add the cooled noodles to the sauce and toss until they are thoroughly coated.
7. Plate the noodles and top with shredded chicken, sliced cucumbers, chopped scallions, a generous spoonful of chili crisp, and a sprinkle of sesame seeds.
