Instructions
1. For the Chili Oil Dipping Sauce: Combine 2 tablespoons of soy sauce, 2 teaspoons of Chinese black vinegar, and 1.5 tablespoons of homemade hot chili oil. Stir well.
2. For the Sesame Peanut Dipping Sauce: In a bowl, combine 3 tablespoons of 100% peanut butter, 1 tablespoon of sesame paste, 2 to 3 tablespoons of sugar, and 1.5 pieces of Chinese bean curd. Add 1/2 teaspoon of salt. Mix thoroughly until well combined.
3. Gradually add 3 to 4 tablespoons of boiling hot water in batches to the peanut butter mixture, stirring until it reaches a creamy texture. Taste and adjust salt or sugar if needed. Garnish with a sprinkle of sesame seeds and diced cilantro.
4. For the Spicy Soy Dipping Sauce: Combine diced scallion, cilantro (or garlic/shallots), and a little bit of fresh hot chilies (or chili flakes). Optionally, add 1/2 teaspoon of sugar. Add soy sauce and a drizzle of toasted sesame oil. Stir and taste, adding a splash of water if too salty.
5. For the Vinegar Ginger Dipping Sauce: Combine thin ginger strips, 2 tablespoons of white vinegar, and 2 teaspoons of soy sauce.
6. For the Garlic Vinegar Sauce: Press 4 to 5 cloves of garlic through a presser. Add 1/2 teaspoon of salt and 1/4 teaspoon of sugar. Mix them together until the garlic becomes a sticky paste.
7. Drizzle a couple teaspoons of toasted sesame oil into the garlic mixture and stir until well combined. Add 2 tablespoons of white vinegar and some freshly ground white pepper. Continue mixing. Garnish with sesame seeds and red pepper flakes (optional).
8. For the Scallion Ginger Dipping Sauce: In a bowl, combine 3 tablespoons of diced scallion, 2.5 tablespoons of finely grated ginger, a little bit of cilantro stems, 1/2 teaspoon of salt, and a few grinds of white pepper.
9. Heat some oil (peanut oil or any vegetable oil) to smoking hot and pour it into the bowl with the scallion and ginger mixture. Stir immediately.
