4pieces Chicken Empanadas, 1serving Shrimp Creole, 1serving Braised Short Rib, 1serving Spice Rubbed Pork, 1fish Whole Red Snapper, 2tbsp Olive Oil, 1pinch Salt, 0.5tsp Chili Flakes, 200g Potatoes, 100g Brussels Sprouts, 100g Carrots, 200g Root Vegetables (various), 100ml Chicken Stock, 1tbsp Butter, 2cloves Garlic, 2pieces Plantains
Instructions
1. Prepare and season the whole red snapper with olive oil and salt. Score the fish for even cooking.
2. Place the seasoned snapper on a plancha grill. Add chili flakes and ensure even grilling to get wonderful flavors and texture.
3. Transfer the grilled snapper to the oven for 8-10 minutes to cook through.
4. Blanch root vegetables (potatoes, Brussels sprouts, carrots, etc.) in chicken stock for 2-3 minutes. Shock them to stop cooking.
5. Caramelize plantains in olive oil and butter until golden brown.
6. Prepare black beans and rice. Combine them to serve with the spice-rubbed pork.
7. Prepare the spice-rubbed pork and cook it to perfection. Top with mojo sauce.
8. Prepare the braised short rib with caper relish and black bean puree.
9. Prepare the shrimp creole and serve with flat-pressed garlic bread.
10. Plate the snapper over the root vegetables and drizzle with pan juices.
