Sand Ginger Seared Chicken Wings in Oyster Sauce

500g Chicken wings, 0.25tsp Salt, 0.25tsp White pepper powder, 1Tbsp Soy sauce, 1tsp Fresh sand ginger, 1tsp Sand ginger powder, 5cloves Garlic, 5stalks Scallions, 1Tbsp Cooking oil, 2medium Shallots, 2.5Tbsp Oyster sauce, 1Tbsp Chinese cooking wine
Instructions
1. Pat the chicken wings dry with paper towels.
2. Add a quarter teaspoon of salt, a quarter teaspoon of white pepper powder, 1 tablespoon of soy sauce, fresh sand ginger or 1 teaspoon of sand ginger powder, five smashed and diced garlic cloves, and the white part of five diced scallions to the chicken wings. Reserve the green part of the scallions for later.
3. Add 1 tablespoon of cooking oil to the wings. Mix well and massage the wings for 5 minutes.
4. Marinate the chicken wings in the fridge for at least 30 minutes.
5. Heat a wok on high heat until it is smoking hot. Add a generous amount of oil and swirl it around to create a nonstick coating.
6. Remove most of the aromatics from the wings and add the wings to the wok. Switch the heat to medium or medium-low and sear the wings in one layer undisturbed until golden brown.
7. Once the wings are nicely browned on one side, flip them. Add the remaining aromatics from the marinade and some halved shallots to the wok. Let them cook as the other side of the wings sear.
8. Once both sides of the wings are beautifully charred, pour out some excess oil from the wok.
9. Add 2.5 tablespoons of oyster sauce and 1 tablespoon of Chinese cooking wine, splashing it from the side of the wok. Stir to deglaze the bottom.
10. Toss in the reserved green part of the scallions and give everything a quick stir.
