Instructions
1. Cut the rack of St. Louis cut ribs into individual pieces. You can use St. Louis cut or baby back ribs. Keep any extra meat pieces.
2. Pat the ribs dry to remove any extra moisture, which helps with searing.
3. In a small bowl, mix onion powder, garlic powder, smoked paprika, kosher salt, and pepper to create a seasoning blend.
4. Place the ribs in a large bowl and season them generously with the spice blend, ensuring every rib is coated. Toss with your hands to distribute the seasoning evenly.
5. Heat about 2 tablespoons of oil (or more, depending on your pan size) in a deep cooking vessel suitable for searing and braising. Sear the ribs in batches for 2 to 3 minutes on each side until golden brown with a nice crust. Do not overcrowd the pan. This process will take about 10 to 15 minutes.
6. Remove the seared ribs from the pot.
7. In the same pot with the rendered fat from the ribs, add sliced onions and smashed garlic. Cook for about 2 to 3 minutes until the flavors are released.
8. Add canned pineapple juice, soy sauce, apple cider vinegar, and Worcestershire sauce to the pot. Let this sauce cook for a couple of minutes for the flavors to meld.
9. Return the seared ribs to the pot, ensuring they are submerged in the liquid. It's okay if they are on top of each other.
10. Cover the pot and cook in the oven at 300 degrees Fahrenheit (150 degrees Celsius) for 1 hour and 45 minutes to 2 hours.
11. After 1 hour of cooking, briefly remove the pot from the oven and gently move the ribs around to ensure even cooking and sauce distribution. Cover and return to the oven to finish cooking.
