Sourdough Starter

60g whole wheat flour, 60g filtered water, 240g all-purpose flour
Instructions
1. Grab a clean glass container that is at least a pint or larger and add whole wheat flour and filtered water.
2. Stir the mixture completely until combined to a thick batter or paste consistency.
3. Loosely cover the container and let it sit in a warm, cozy place (about 75°F) for 24 hours.
4. Remove half of the starter, then feed with fresh all-purpose flour and filtered water, mixing well and marking the level on the container.
5. Repeat discarding and feeding every 24 hours until the starter is bubbly, doubles in size, and is mature enough to use.
