Chicken Wings

1kg Chicken wings, 5g Salt, 1l Frying oil
Instructions
1. For oven-baked wings, season the chicken wings with salt. This can be done overnight or a day before cooking to help dehydrate the surface and retain moisture.
2. Place the seasoned wings on a wire rack set in a rimmed baking sheet.
3. Bake in a low oven at 250 degrees Fahrenheit (120 degrees Celsius) for about 30 minutes to dehydrate the skin and break down collagen.
4. Increase the oven temperature to about 425 degrees Fahrenheit (220 degrees Celsius) and continue baking until the wings are gorgeous and crispy.
5. For fried wings, double fry them. Fry halfway, then pull them out and let them rest. This rest can be longer than for Korean fried chicken, up to 20-30 minutes.
6. Finish with a second fry right before serving to crisp them up and remove any moisture that has migrated to the skin.
7. Toss the cooked wings in a nice sauce if desired.
