Apple Cobbler

Instructions
1. Peel and slice the Granny Smith apples into half-inch slices. You can go thinner if you prefer.
2. Transfer the sliced apples to a large pyrex dish.
3. Zest one lemon and add the zest to the apples. Squeeze about two tablespoons of lemon juice over the apples.
4. Add 1/3 cup of packed brown sugar, 1 tablespoon of cornstarch, a generous half teaspoon of cinnamon, and about a quarter teaspoon of freshly grated nutmeg to the apples.
5. Add about a teaspoon of vanilla extract to the apple mixture.
6. Using clean hands, toss all the ingredients together until the apples are evenly coated. Press the apples down slightly to remove any large gaps.
7. Cut 170 grams (3/4 cup) of unsalted cold butter into one-inch cubes and place them back in the fridge or freezer to keep cold.
8. In a food processor, combine 240 grams (2 cups) of all-purpose flour, 100 grams (1/2 cup) of sugar, a stingy teaspoon of salt, and 1 tablespoon of baking powder. Pulse to combine.
9. Optionally, add half a quarter teaspoon of cinnamon to the dry ingredients and pulse again.
10. Add the cold butter cubes to the food processor and pulse until the mixture resembles a coarse meal with some pea-sized pieces of butter.
11. Drizzle in 3/4 cup of half and half (or a mixture of cream and milk) and pulse until a wet biscuit mixture forms.
12. Evenly spread the biscuit topping over the apple mixture in the pyrex dish. Don't try to make it perfectly smooth; it's fine if some apples are exposed.
13. In a small bowl, mix 2 tablespoons of white sugar with a big pinch of cinnamon to create cinnamon sugar. Sprinkle this over the biscuit topping.
14. Bake in a preheated oven at 350°F (175°C) for about 45 minutes, or until the apples are soft and the topping is golden brown.
15. While the cobbler cools, prepare the whipped cream. In a mixer, combine about 1 cup of heavy cream, a couple of tablespoons of sugar, and a big splash of vanilla extract.
16. Whip on high speed until soft peaks form.
17. Serve the apple cobbler with a big dollop of whipped cream or ice cream.
