How to Cook Steak in a Pan

400g Ribeye Steak, 5g Salt, 2g Pepper, 15ml Extra Virgin Olive Oil
Instructions
1. Choose an entry-level steak cut like ribeye, strip, or tenderloin. Ribeye is recommended for its tenderness and flavor. Consider prime beef for more marbling, or grass-fed for a potentially healthier option.
2. Select a heavy pan, such as cast iron or a mid-priced stainless steel pan with a solid base, for even heat distribution. Avoid Teflon non-stick pans for searing steak at high temperatures.
3. Heat the pan on the stove. For electric stoves, the high side of medium-high heat is often best. Allow the pan to heat for a few minutes until it's very hot.
4. Blot the steak dry with a paper towel to help achieve a better crust.
5. Season both sides of the steak generously with salt and pepper. If unsure of preference, be conservative as more can be added later.
6. Lightly oil the steak directly rather than the pan. This can help reduce oil burning and smoking on the pan's surface. Use extra virgin olive oil or avocado oil.
7. Place the seasoned and oiled steak into the very hot pan. Cook until a decent brown crust forms on the first side. This requires intense heat to brown the outside before the inside overcooks.
