Grilled Halloumi

8ounces halloumi, 1tablespoon olive oil, 1head Romaine, 1count sliced tomatoes, 1count sliced cucumbers, 5leaves fresh mint, 1teaspoon Zaatar, 2pieces pita bread, 1tablespoon lemon juice
Instructions
1. Open the halloumi package and place the cheese on a paper towel to dry out any excess water or brine. This helps with grilling.
2. Cut the halloumi into thick slices. An 8-ounce block typically yields 8-10 slices, each about one ounce.
3. Add olive oil to a grill pan or regular pan and heat on medium heat until it starts to shimmer.
4. Place the halloumi slices onto the hot oiled grill pan. Cook on one side for 3 to 4 minutes without disturbing.
5. Flip the halloumi slices once you see browning on the bottom. Cook for another 2 to 3 minutes until browned on the other side.
6. Serve the grilled halloumi on a platter with zaatar, cucumbers, tomatoes, and pita bread for sandwiches, or as part of a salad.
7. For a salad, place lettuce in a bowl, sprinkle with zaatar, add sliced vegetables, and top with grilled halloumi pieces and fresh mint.
8. For dressing, combine zaatar, a squeeze of lemon juice, and a little olive oil.
