Ingredients
450g Cream Cheese, 200g Granulated Sugar, 4ea Eggs, 250ml Heavy Cream, 1tsp Vanilla Extract, 1pinch Kosher Salt, 20g All-Purpose Flour, 25g Powdered Matcha
Instructions
1. Preheat the oven and prepare a springform pan by spraying with nonstick spray and lining with two overlapping sheets of parchment paper for height.
2. In a stand mixer with a paddle attachment, beat the softened cream cheese and granulated sugar at room temperature until smooth and creamy.
3. Add the eggs one at a time, mixing well after each addition until fully incorporated.
4. Pour in the heavy cream, vanilla extract, and kosher salt while mixing.
5. Sift in the all-purpose flour and mix until smooth.
6. Divide the batter evenly into two bowls, and sift powdered matcha into one bowl, whisking until well combined.
7. Alternate pouring the plain batter and matcha batter into the prepared springform pan to create layers, then use a skewer or spatula to create a marbled pattern.
8. Bake in the oven at 400 degrees Fahrenheit for 60 to 70 minutes until a dark, caramelized crust forms on top.
9. Allow the cheesecake to cool completely so it sets, then slice and optionally dust with extra matcha powder before serving.
