500g Chicken breast, 0.5teaspoon White pepper, 0.5teaspoon Five spice, 0.5teaspoon Garlic salt, 0.5teaspoon Salt, 0.5teaspoon Sugar, 0.5teaspoon Chicken bouillon, 2tablespoons Cornstarch, 2tablespoons Water, 1개 Egg, 1cup Cornstarch (for batter), 0.5teaspoon Salt (for seasoning), 0.5teaspoon Garlic salt (for seasoning), 0.5teaspoon Five spice (for seasoning), 0.5teaspoon White pepper (for seasoning), 1liter Oil (for frying)
Instructions
1. Cut chicken breast into pinky-sized strips: first with half-inch thick slices, then half-inch thick strips.
2. For the marinade, mix white pepper, five spice, garlic salt, salt, sugar, chicken bouillon, cornstarch, and water in a bowl.
3. Add the chicken strips to the marinade and massage them.
4. Crack an egg and lay just the egg yolk on top of the chicken. Wait to mix in the yolk.
5. Spread cornstarch on a plate for a simple batter.
6. For the seasoning, mix salt, garlic salt, five spice, and white pepper in a small bowl.
7. To prep for frying, mix the chicken with the yolk, then with the cornstarch. Try to separate each piece so they're evenly coated.
8. For the first fry, heat the oil to around 350F (175C). Then separate and add each piece individually, frying for 2-3 minutes until the pieces are golden brown.
9. For the second fry, bring the oil to 380F (193C). Fry the chicken for about 30 seconds until they're crispy and a deeper golden brown.
10. Toss the chicken with the seasoning blend, then plate and serve right away.
