Pasta Broccoli

Instructions
1. Remove the hard part of the broccoli stem. Break the broccoli into small florets, ensuring they are as small as possible for a creamier texture. Cut the harder stem parts into small pieces.
2. Add a tablespoon of salt to boiling water. Add the broccoli to the boiling water and cook for 5 to 6 minutes. This will flavor the pasta water.
3. In a separate pan, add a generous amount of extra virgin olive oil (4-6 tablespoons). Crush two cloves of garlic into the olive oil.
4. Turn the stove to medium heat and gently sauté the garlic. Add a spoon of pasta water (from the boiling broccoli) to the pan to prevent the garlic from burning.
5. Add the boiled broccoli to the pan with the garlic and olive oil. Sauté gently on low heat. Mash about half of the broccoli to create a creamy sauce, leaving some pieces whole for texture.
6. Once the broccoli has cooked for 5-6 minutes, add the spaghetti to the same boiling water. Push the spaghetti into the water and stir. Cook according to package instructions (approximately 10 minutes).
7. Just before the pasta is ready, add salt and a generous amount of pepper to the broccoli sauce in the pan.
8. Before draining the pasta, reserve about half a mug of pasta water.
9. Transfer the cooked spaghetti directly from the boiling water into the pan with the broccoli sauce. Add half a mug of the reserved pasta water.
10. Add grated pecorino cheese to the pasta. Mix and stir everything together, flipping the pasta to combine all ingredients and create a creamy consistency.
11. Serve the pasta broccoli on a plate, creating a nest with the spaghetti and topping it with more broccoli.
