Sesame Chicken Burger

500g chicken mince, 1꼬집 salt, 1꼬집 pepper, 2개 lime, 2큰술 Gochujang (Korean chili paste), 2큰술 sesame seeds, 1큰술 olive oil, 3큰술 Greek yogurt, 4개 milk buns, 100g cabbage, 0.5개 cucumber, 10g mint, 2개 spring onions, 1꼬집 sea salt
Instructions
1. Preheat the gas barbecue. If desired, use a smoke box with fruit woods to add smoky flavor.
2. Season 500g of good quality chicken mince with salt and pepper. Grate the zest of one lime into the mince. Mix well and divide into four equal portions to form burger patties.
3. Sprinkle sesame seeds over the top of the chicken patties. Give them a light spritz with olive oil for nice color.
4. Place two patties on a plancha (or cast iron pan) and two directly on the barbecue bars. Cook on full heat for a hard and fast cook.
5. While the burgers cook, prepare the sauce: combine three big spoons of Greek yogurt with a heaped teaspoon of Gochujang and the juice of half a lime. Mix well.
6. Toast the milk buns on the barbecue.
7. Prepare the crunchy slaw: finely slice cabbage and cucumber using a speed peeler. Scratch the cucumber to help it hold dressing. Finely slice mint and spring onions. Squeeze lime juice, drizzle good oil, and season with sea salt. Mix well.
8. Assemble the burgers: spread Gochujang sauce on the toasted bun, add the chicken patty, top with the crunchy slaw, and serve.
