4cups All-purpose flour, 0.33cup Butter, 0.5tsp Kosher salt, 0.33cup Lard, 1cup Sweetened water
Instructions
1. Combine 4 cups of all-purpose flour, 1/3 cup of butter, and salt to taste (about 1/2 teaspoon per cup of flour) on a cutting board.
2. Cut the butter and lard into the flour using a knife until it almost disappears.
3. Add 1 cup of sweetened water to the flour mixture, integrating it using the Italian well method, bringing the walls of flour into the water until a dough forms.
4. Knead the dough together.
5. Beat the dough with a rolling pin or hammer, rolling and folding it over on itself repeatedly for about 45 minutes (or up to 1.5 hours) until it appears lighter and blisters, showing thin layers.
6. Roll the dough to about half an inch thick.
7. Ball up portions of the dough in your hands, flatten them slightly, and dock them with a fork to prevent large bubbles from deforming the biscuit.
8. Bake the beaten biscuits gently at 325°F (160°C) for about an hour.
