Matar Paneer

Ingredients
300g paneer, 30g ghee, 1개 onion, 20g ginger garlic paste, 5g chili powder, 5g cumin seeds, 3g turmeric, 200g tomato, 5g salt, 100ml water, 50g cashew butter, 200g peas, 3g garam masala, 30ml heavy cream
Instructions
1. Cut the paneer (or tofu) into one-inch cubes, ensuring they are roughly the same size for even cooking.
2. Heat ghee in a frying pan over medium heat until melted. Add the paneer cubes and sear them on low heat until golden brown on at least two or three sides. Remove and place on a paper towel-lined plate.
3. In the same frying pan, add chopped onions and ginger garlic paste. Sauté for about five minutes or until the onions are soft and translucent.
4. Add chili powder, cumin seeds, and turmeric to the pan. Stir them into the oil to activate their flavors and make them aromatic.
5. Add tomatoes and salt to the pan. The salt will help break down the tomatoes faster. Add water to help create a saucy consistency.
6. Simmer the mixture for five to seven minutes until it thickens and the tomatoes are almost dissolved.
7. Lower the heat and slowly stir in the cashew butter until it is fully incorporated and the sauce becomes thick and luxurious.
8. Gently add the seared paneer cubes and peas to the sauce. Stir to combine.
9. Top with garam masala and a swirl of heavy cream.
